Here’s a good recipe I found in my mom’s old recipe box. She would have frosted it, but we have updated it by spreading Nutella between the layers and sprinkling the top with powdered sugar. Yum!
Mom’s Lemon Cake
Cream together:
1 1/4 cups sugar
3/4 cup shortening
Add:
2 eggs
1 1/2 tsp vanilla
1 1/2 cups milk
zest from 2 lemons
juice from 1/2 lemon, mix well
Add:
2 cups flour
3 tsp baking powder
1/2 tsp baking soda
1 tsp salt
Mix well and pour into greased and floured round cake pans. Bake at 375 degrees for about 30 minutes or until toothpick comes out clean. Cool in pans for 15 minutes before removing.
